Broccoli Rabe, Bean & Sausage Soup
Great soup for a cold winter day or night - or
when returning from the slopes!
2 Tbs extra-virgin olive oil
1 lb Italian hot sausage
1 medium onion, chopped
1 carrot, chopped
1 large potato, peeled and chopped into small dice
2 garlic cloves, chopped
1 bay leaf
2 cans white beans, drained
salt and pepper
4 cups chopped broccoli rabe and greens
1/2 cup white wine
2 cups chicken stock
Grated Parmigiano-Reggiano or Romano
Put the olive oil into a large soup pan, cook the sausage until
browned-
Add onions, carrots, garlic, potato and bay leaf and 1 can plus
1/2 of the other can of beans
(mash the other 1/2 can of beans with a fork, and then add to the
pot). Stir. Season with
salt and pepper. Cook for 5-7 minutes. When veggies are slightly
tender, add the wine.
Cut the broccoli rabe into ribbons and add to the pot, stir to wilt.
Add the chicken stock and raise the heat to bring to a boil. Cook
for at least 25 min.
Serve with grated cheese and a nice, crusty wheat bread!
Some olives and wine and you are set to go!
